Ajotomate: A Salad to Savor

This vibrant and tangy tomato salad originates from the Murcia region of Spain, and it beautifully showcases the art of simplicity. With no elaborate ingredients or intricate cooking techniques required, it effortlessly comes together in just ten minutes. A key step in preparing this salad is to grind the garlic into a paste using a mortar and pestle. While you could opt for finely mincing the garlic, the texture and depth of flavor will not be the same. Although it may take a little extra effort, this step is crucial in achieving the salad's distinct flavor profile. The delightful combination of tangy vinegar, sweet tomatoes, smoky paprika, and the warmth of garlic harmonizes perfectly. While you can indulge in the salad immediately, I recommend allowing the tomatoes to marinate in their juices for about thirty minutes; this will elevate the flavors and enhance juiciness. Serve this delightful dish as a starter or side, and it's versatile enough to enjoy any time of the year!


INGREDIENTS


  • 8 Sweet on the Vine Tomatoes

  • 1 Cloves of Garlic

  • 4 Tbsp Red Wine Vinegar

  • 1 tsp Smoked Paprika

  • 1 tsp Cumin

  • Olive Oil

  • Salt and Pepper


DIRECTIONS

  • Cut the tomatoes into quarters.

  • Peel the garlic and grind into a paste using a mortar and pestle.

  • Add the red wine vinegar, spices and olive oil to the mortar and mix with the pestle.

  • Drizzle over the tomatoes with a sprinkle of salt and pepper then mix.

  • Let marinate at room temperature for 30 minutes before serving.
