INGREDIENTS
8 Sweet on the Vine Tomatoes
1 Cloves of Garlic
4 Tbsp Red Wine Vinegar
1 tsp Smoked Paprika
1 tsp Cumin
Olive Oil
Salt and Pepper
DIRECTIONS
Cut the tomatoes into quarters.
Peel the garlic and grind into a paste using a mortar and pestle.
Add the red wine vinegar, spices and olive oil to the mortar and mix with the pestle.
Drizzle over the tomatoes with a sprinkle of salt and pepper then mix.
Let marinate at room temperature for 30 minutes before serving.
